Jaggery Coated Banana Chips (Sharkkara Varatti) are thickly sliced raw bananas coated with jaggery. It’s one of the must-have dishes in any sadya ( a feast ) recipe of Kerala. Whether it is marriage, Onam or any other functions where food is served on a banana leaf, then this is a real must. Sharkara Upperi or Sharkara Varatti is a sweet chip version made with unripe plantain and jaggery. Crispy and salty plantain chips are easier to make. But Sharkkara Varatti needs a little practice to get it right. Banana Chips are thinly sliced. But these pieces are thicker than the normal banana chips and are fried for about an hour in low flame till really crisp. Once it completely cooled, mix the fried plantain chips to the thick syrup of Jaggery. Then mix spices like cardamom powder, cumin powder. Make sure to coat each piece of plantain chips with jaggery. Then finally we add ground ginger (chukka) also to make it extra flavour rich.
